Aattinkaal Nadan Roast

Ingredients Needed for Aattinkaal Nadan Roast
1 leg of a young Lamb about 1 to 1 and 1/4 kilo
1 tbsp chilli powder
1  piece ginger ( 2" piece)
1 whole pod garlic ( 12-15 flakes of garlic)
1 tbsp whole garam masala
1 tsp vinegar
oil as needed
2 cups onions sliced fine
2 small onions sliced
small sized potatoes deep fried to garnish the Roast

How to prepare Aattinkaal Nadan Roast
Cut the leg of the Lamb in to two pieces. slash the thick part of the flesh here and there for the masalas to get in easily.
Grind chilli powder, ginger, garlic, garam masala powder and vinegar to a smooth paste.
Apply the paste on to the mutton pieces and keep aside for about 2 hours to marinate.
Add just enough water to cook the mutton. Remove the leg pieces from the gravy and shallow fry till both the sides turn golden.
In the remaining oil, fry the onions till they turn brown. Mix with the cooked mutton and keep aside.
Heat a little oil , add the sliced small onions, fry till golden. Pour the remaining stock after the mutton was cooked.
Mix in deep fried potatoes.
Place the leg pieces in a serving dish with the fried onions and then pour the potato mix on to the top of the meat.
Seve hot with Pulao, hot steaming plain rice etc.
