Potato Brinjal Masala

Ingredients needed for Urulankizhangu Vazhuthananga Thoran
2 cups Urulankizhangu / Potatoes cut into small pieces
2 cups Vazhuthananga / brinjals  cut into small pieces
1 cup onion chopped
1 cup grated coconut
4 green chillies slit
8 garlic flakes
1 pinch turmeric powder
3 tbsp  coconut oil
1 tsp mustard
salt to taste

How to prepare Potato Brinjal Masala:
Heat oil in a fry pan / Kadai, splutter mustard.
Add crushed garlic and chopped onion and saute till they are golden. Add brinjals and stir well.
Then add potatoes, turmeric powder and slit green chillies
Add just enough water ( about 1 cup of water)  for the vegetables to cook.
As the vegetables gets tender and the water dries off, add the grated coconut to the dish and mix well.
Serve hot with rice and sambar.
